Audrey Demers has been in the kitchen for over 25 years. Her love of food began while traveling in Europe in 1979, tasting cuisines of France, Spain, Portugal, Italy and Greece. She has made it her journey to bring this experience to all she prepares today.

In 1983 she began working in restaurants with passion, turning her culinary research into soup, which she became known for among the Queen Street restaurant patrons.

In 1993, Audrey moved to Durham to live and work on a bio-dynamic farm. Michael Schmidt of Glencolton Farm hired Audrey as cheese maker and later in the organic bakery. Living on the farm gave her the opportunity to be a member of Saugeen CSA. (Community Supported Agriculture). With organic meat, dairy and produce in abundance, Audrey was able to experiment with preserving and canning, always having a stocked pantry for winter. Farm living gives her respect of what it takes to produce quality food.

From 1994 to 2001, Audrey was the summer owner/operator of The Rectory Café on The Toronto Islands. She started with a café, expanding to include dinners with an extensive and contemporary menu. Shortly afterwards, she integrated catering into the business. Her efforts were written in NOW Magazine, Leisure Publications in Canada and the U.K. Her philosophy and passion of food was televised nationally on the Discovery Channel when food television was in its infancy.

The Beaver Valley Ski Club had Audrey manage their food and beverages for eight ski seasons. She led a seasonal staff of 32, training staff to prepare food from scratch. The quality of food became the rival of all other escarpment clubs. Today, Ontario ski clubs embrace serving these healthier choices.

Audrey has studied Food Styling for Film, Television and Event Presentation, Food, Beverage and Labour Cost Control, Safe Food Handling and is an Honours graduate of George Brown Culinary School. Audrey continues her professional development, passionate to learn more about Molecular Gastronomy and will soon be cooking wild game at a hunting cabin near Collingwood.
